What is Gastronomia?
Gastronomia specializes in frozen food solutions for North American hotel and restaurant professionals.
Who are Gastronomia’s clients?
We have two main customer bases: Foodservice and retail. Foodservice comprises high-end catering professionals such as hotels, restaurants, cafes, caterers, banquets, casinos, and golf clubs. Retailers include supermarket chains, independent grocers, markets, convenience stores, and shop in shops.
Where are Gastronomia products distributed?
Our local distributors deliver to major cities across Canada. Check out our list of frozen food distributors to find the one nearest you.
How long does it take to receive my order?
Delivery time depends on your distributor and product availability. When your distributor lists a frozen food product, its delivery time is generally 1 to 5 days.

Questions about our frozen food products

Where are Gastronomia frozen food products sourced?
Our frozen food products come mainly from Europe, but some are made in Quebec and other parts of Canada.
How do you use Gastronomia products?
Most of our frozen food products are extremely easy to use and require minimal handling. For example, our ready-to-bake pastries go straight from the freezer to the oven. Each product is accompanied by clear preparation instructions for defrosting or baking.
Are fresh vegetables a better source of nutrients than their frozen counterparts?
No. Fresh vegetables often take several days to be harvested and used. During this time, they lose many of their vitamins and nutrients. By contrast, our vegetables are frozen mere hours after being picked, thus preserving their nutrient intake.
What’s the difference between ready-to-bake and proof-and-bake pastries?
Ready-to-bake pastries go straight from the freezer into the oven for 10-15 minutes at 162°C / 325°F. There is no need to defrost, steam and egg wash them before baking.

Proof-and-bake pastries should be parboiled for two hours at 28 °C / 82 °F or left at room temperature for 6-8 hours before being egg-washed and baked.
How long can Vergers Boiron fruit purees and coulis be kept once defrosted?
5 days in the refrigerator.
Are your products kosher?
At the moment, only Les Vergers Boiron coulis and purées are kosher. Click here for proof of certification.

Questions about freezing

Are Gastronomia frozen products of the same quality as fresh products?
Yes! Our quality products are rigorously selected by our Flavour Committee and sourced from the best frozen food manufacturers. Remember, an excellent frozen product begins as an outstanding fresh product. Moreover, freezing preserves freshness, taste, texture, and nutritional value.
How long can I keep Gastronomia frozen food products?
Depending on the product, from 9 to 24 months if stored at -18°C / 0°F. Once thawed, products must be stored in the refrigerator and have the same shelf life as fresh products.
