Pineapple Citrina Mocktail


- 60 ml of pineaple puree,
- 1 cucumber slice,
- 2 basil leaves,
- 25 ml of lemon juice,
- 30 ml of maple syrup,
- Sparkling water to taste.

1- In a shaker, mash the cucumber slice and the basil leaves.
2- Add the pineapple puree, lemon juice and maple syrup.
3- Shake vigorously with ice, strain twice.
4- Moisten the rim of a glass with water (or with a lemon wedge already squeezed). Arrange the grated coconut on a plate, and invert the glass to decorate the rim.
5- Pour the mixture over ice in the serving glass.
6- Top up with sparkling water.
7- Decorate with a cucumber slice and a few basil leaves.

TIP : You can add a touch of mezcal.
