Caramelized Apples Tartelette

INGREDIENTS


For 10 tartelettes

10 Almond Crousty-Pie tartelette shells

For Norman-Style mixture
:
- 75 g of milk,
- 75 g of liquid cream,
- 3 egg yolks,
- 30 g of sugar.

For caramelized apples
:
- 5 to 6 apples (Gala or other),
- 250 g of butter,
- 500 g of caster sugar,
- 50 g of water,
- 50 g of milk.

PREPARATION


Thaw Almond Crousty-Pie tartelette shells for 30 minutes at room temperature.

Norman-Style Mixture :
  1. Mix egg yolks with sugar;
  2. Add milk and cream.

Caramelized apples :
  1. Make a caramel with water and sugar;
  2. Add hot milk out of fire;
  3. Incorporate butter in dices;
  4. Peel the apples and cut them in quarters;
  5. Dispose them in the caramel and boil out for some minutes, until they are caramelized;
  6. Drain.

SET-UP


  1. Dispose 3 to 4 apple quarters in the tartelette shells;
  2. Garnish with Norman-style mixture and cook in the oven at 180°C / 350°F for 20 minutes;
  3. Let it cool down and add topping;
  4. Decorate with caramel brindilles.
